Beef shank is a lean, very tasty, tender and well-flavored meat. It is cut into boneless medallion-shaped pieces of meat with a thickness of 4-5 cm, along with tendons. This piece of meat contains a lot of gelatin and one of the most collagen-rich parts of the beef, and so when cooked slowly, its gristle will turn into jelly giving it a wonderful rich beef flavor. It is well suited for jellied meat, as well as for thick broths and soups with a variety of ingredients.
